Mix dry ingredients:
2 cup flour
3/4-cup chocolate chips
1/2 cup sugar
3 t. baking powder
1/2 t. salt
Stir in:
1 egg
3/4-cup milk
1/3-cup oil
only until dry ingredients are
moistened.
Topping:
Mix the following ingredients:
3 T sugar
2 t. brown sugar
Sprinkle over batter
Bake at 400 for 20- 25 minutes.
Makes 12 muffins

2 c. flour, sifted
1/2 tsp. cream of tartar
4 tsp. baking powder
1/2 c. shortening
2 tsp. sugar
2/3 c. milk
1/2 tsp. salt
DIRECTIONS:
1.
Heat oven to 450 degrees.
The shelf should be in the middle of the oven.
2.
Measure out all ingredients before you begin to mix.
3.
Sift together the sifted flour, baking powder, sugar, salt and
cream of tartar in a mixing bowl.
4.
Cut in the shortening with a pastry blender.
5.
Add milk all at once.
6.
Stir with a fork until the dough follows the fork around the bowl.
7.
Turn the dough out on to a lightly floured board. (You can use wax
paper sprinkled with a little flour for easy cleanup.)
8.
To knead, fold dough and press down gently with hands, turn dough,
fold over and repeat process 8 to 10 times.
9.
Roll dough 1/2 inch thick.
10.
Using a biscuit cutter dipped in flour, cut biscuits without
twisting the cutter. Gather up the
scraps, re-roll the dough and cut again.
Remember: the more you
handle the dough, the harder and tougher the biscuits become.
11.
Place on ungreased baking sheet and bake for 10 to 12
minutes. The time depends on the
size of the biscuit. Serve and
enjoy! Makes a dozen biscuits.

4 medium apples
2 tsp. cinnamon
4 tsp. sugar
4 eggs
2 c. sugar
1 c. oil
3 c. sifted flour
3 tsp. baking powder
1/2 tsp. salt
1/2 c. orange juice
1 tsp. vanilla
1.
Preheat oven to 350 degrees.
2.
Grease and flour a tube pan.
3.
Core and peel apples; then cut them into slices.
4.
In a small separate bowl, mix together 2 tsp. Cinnamon and 4 tsp.
sugar.
To make the cake
batter:
5.
Beat eggs until thick and lemon colored.
6.
Gradually beat in 2 c. sugar and then the oil.
7.
Resift flour together with baking powder and salt.
8.
Stir together the orange juice and vanilla.
9.
Add sifted dry ingredients to the beaten egg, ALTERNATELY with the
orange juice. You will divide your
ingredients as follows:

Dry ingredients - 3

Orange juice - 2
To assemble cake in
the pan:

Pour 1/3 of the
batter into pan.
11.
Arrange 1/2 of
the apples over the top.
12.
Sprinkle with
1/2 cinnamon-sugar mixture.
13.
Add another 1/3
of the batter over the apples. Place the remaining apples over the batter and
sprinkle with the rest of cinnamon-sugar mixture.
14.
Top with last of the batter.
15.
Bake in 350 degree oven for 60 minutes.

2 carrots, cut into
julienne strips
1 small zucchini, cut
into julienne strips
6 green onions,
biased-sliced into 1/2Ó pieces
1/2 pkg. frozen snow
peas
2 tsp. sugar
1 Tbsp. cooking oil
2 Tbsp. cold water
2 Tbsp. cooking sherry
2 Tbsp. soy sauce
Dash of pepper
1 1/2 tsp. cornstarch
PROCEDURE:
1.
Cut all vegetables according to directions BEFORE you begin to
stir-fry.
2.
Prepare rice according to directions on box. Keep warm (in hot water) until ready to
use.
3.
For sauce: Stir together cold water, cooking sherry, soy
sauce, sugar, cornstarch, and pepper.
Set sauce aside.
4.
Preheat a wok on high heat.
Add cooking oil. Add more
oil as needed during cooking.
5.
Stir-fry carrots in hot oil for 1 minute.
6.
Add snow peas and zucchini.
Stir-fry for 1 1/2 minutes.
7.
Add green onions.
Stir-fry about 1 1/2 minutes or until vegetables are tender-crisp.
8.
Push vegetables from the center of the wok.
